The Chile Pepper Institution is a not for profit organization focused on researching and documenting chili / capsicum varieties. Established in 1992, Chile Pepper Institute continues the work of Fabian Garcia towards standardizing the different chili cultivars.
CPI conducts its research at the Fabian Garcia Horticultural Center on the campus of the New Mexico State University. It was responsible for documenting the Ghost Pepper as the hottest it had ever measured. Those findings led to the Ghost Pepper being recognized as the hottest pepper in the world by Guinness World Records. Later, CPI gave the title of hottest pepper in the world to the Trinidad Moruga Scorpion.
