Red Tail hot sauce is based on the Trinidad Moruga Scorpion pepper and it shows that well in more than just its heat. The flavor of the scorpion pepper is distinct despite all of its heat. This is not a sauce for the timid. It is one of the hottest non-extract based sauces I have sampled thus far.
The immediate flavor is a savory blend of garlic, tomato and peppers. It had almost an Italian sense to it for the first few seconds. Then the heat starts to build, almost sneaking in after the initial flavor. From there, the heat builds for the first few minutes and lasts about ten minutes.
Although the distinct flavor of the Trinidad Moruga Scorpion pepper is definitely captured by this sauce, the blending with tomato, garlic, and other spices expands the taste beyond the pepper and compliments the overall experience.
