Purple Jalapeno transition from green to purple, then finish red. They are generally harvested during the purple stage because once they turn red they tend to be a wee bit over ripe. Because the plant often has peppers of all three colors at the same time, it is sometimes called Multi Color Jalapeno.
Like most jalapeno variety, the purple jalapeno has very crunchy thick walls. It is perfect to use as a fresh garnish or for pickling and cowboy candy. Because the peppers grow upright, they poke threw the foliage and make for a beautiful edible ornamental.
