Killer Swarm by Pex Peppers tastes like liquid Trinidad Moruga Scorpion peppers minus just a little bit of the capsicum. This being one of my favorite super hot peppers,I loved this sauce. It tastes so very much like the Trinidad Moruga Scorpion that even the vinegar seems toned down compared to many sauces. I suspect Pex Peppers found the perfect balance between vinegar and honey that neither takes away from the pure flavor of the pepper. Neither sweet nor sour is particularly noticeable. Instead, you get the pure, crisp, and hot flavor of the Trinidad Moruga Scorpion.
Blended with wildflower honey, the sauce contains only enough sweet to take a bit of the edge off the scorpion peppers. Lemon juice helps to shorten the burn delay, making it hit you a second or two after it hits your mouth. Hang time was not particularly long, which just makes you want another taste even sooner.
Off the spoon, it is clearly on the other side of comfortable but not to the point of being a hiccup maker. On a veggie burger with cheese, eight drops and you would swear you’d included fresh peppers in that burger. Drizzled onto mayonnaise and it is a great blend to dip fries. Added to sour cream and it is a great dip for nacho or other chips. Stand alone and it is the closest thing you will find to fresh Trinidad Moruga Scorpion peppers short of growing the plant yourself.
I really want to stress the point that this hot sauce tastes almost exactly like the pepper it is made from. I am not a great fan of purees and other methods of preserving chili peppers which leave a distinct taste of vinegar. I think it is far too often that hot sauces would better be called pepper flavored vinegar. This sauce fits into none of those categories. It tastes more like liquid peppers.
