Holy Jolokia Wing Sauce was created by the Chile Pepper Institute of New Mexico University and CaJohn’s Fiery Foods. Its main ingredient is ghost pepper and its flavor really lives up to that name. This is not the watered down concoction that Popeye’s wings are coated in. This is the real deal, true to the flavor of the ghost pepper.
Made with a blend of:
- Ghost Pepper / Bhut Jolokia
- Lemon Extract
- Xantham gum (a natural thickening agent)
Although sold as a ‘wing sauce’, Holy Jolokia is more of a traditional hot sauce with a thickening agent. The off the spoon test screams ghost pepper. Although there is a bit of sweet to balance the hot, the distinct flavor of the ghost pepper is there. The heat is above the range of average commercial sauces but not so much that you will go screaming from the table.
The thickening agent helps the sauce to cling to wings. In my case, to battered deep fried cauliflower. My vegetarian substitute for wings. In that department it is great. A perfect sauce for deep fried foods.
