Fear this Hot Sauce by Hellfire Hot Sauce gets its heat from the Carolina Reaper pepper. Let me first say this is a hot sauce which really shows that heat. Aided by the citric acid of lemon and lime, the heat is sudden and lasting. This is not a sauce for the average consumer who is used to off the shelf hot sauce. If you are not ready for the heat, this one will burn you up. It is likely one of the hottest hot sauce I have ever sampled.
Despite a distinct lack of thickening agents, this is one thick sauce. A few seeds and chunks of pulp were visible. When poured onto a spoon, there are enough tiny chunks that the surface is not at all smooth. But the chunks are soft enough that the texture is smooth in your mouth. The seeds seem to have been cooked down enough that they are barely noticeable.
The intense heat is nearly instant with only a delay of a second or two. It lasted nearly 10 minutes. Off the spoon, this sauce will surely promote hiccups in people prone to that response. It contains enough natural capsicum from the Carolina Reaper peppers that inhaling threw the mouth directly after a spoon full is not a good idea.
The taste of lime and maybe a hint of lemon is noticeable. It seems to bring out some of the fruity flavor of the Carolina Reaper. Although it has the distinct Carolina Reaper flavor and near overwhelming heat, the sun dried tomato, onions, garlic and spices do come threw in a very nice blend of savory flavors.
This is an excellent sauce for cooking. Drizzled over sour cream, even the smallest amount will kick up some nacho dip. But it is not for the uninitiated ChiliHead. Not at all.
